As I say goodbye to Winter – with a nice “GTFO and never come back” tone – I prepared this typical Chilean dish. It was really easy to substitute some ingredients to make it Primal. Who needs corn, rice and potatoes when you have cauliflower and broccoli? Specially when you can’t really taste any of it in the final product!
– Lard, liberally
– 1 pound beef, chopped in small squares
– 1 medium onion, chopped
– 2 garlic cloves
– 7 cups of beef broth
– 1 tsp dried oregano
– 1/4 tsp cumin
– 2 tsp salt
– 1 medium carrot, chopped
– 1 cup butternut squash, chopped
– 1 cup cauliflower
– 1 cup broccoli
Serves 5 Groks, or 4 really healthy Groks.
Heat up your favorite, most magical pot during a full moon night. After a few minutes doing some Primal dance, add the lard to the pot, then brown the meat and the onion. After the meat has become a brown yummyness, and the onion has started to caramelize, add the oregano, cumin and salt. Stir, then add your favorite organic broth. If you use regular, non-grass-fed broth, I won’t tell anyone. But shame on you.
Once the potion starts to boil, add all the memaining ingredients. Cut your fire down to low, so you’ll get a lovely simmer. Put a lid on it, then go sprinting outside for 20 minutes. After that, you’re done.
Now, you can go and serve right away. But this is the kind of soup that you really should let cool down, store in your fridge, and eat the next day.
Serve with fresh chopped cilantro. On a winter’s night, it will almost make you cry of joyness!
